Burrito Bowl with Lummus & Sun-dried Tomato

Simple Mexican style salad with a Lummus dressing🍅🌽🥑 You've gotta try this!

  • Time : 15 min
  • Serves 1
Ingredients :
  • 2-3 mixed leaves per handful
  • 3-4 tbsp cooked rice
  • 2-3 tbsp cooked black beans
  • 2-3 tbsp cooked corn
  • 1/4 red bell pepper, 1/4 yellow bell pepper & 1/4 green bell pepper (chopped)
  • 1 handful of cherry tomatoes (chopped)
  • 1/4 chopped avocado
  • 1/2 chopped fresh corrinander plus leaves for garnish
Dressing
  • 2 tbsp Lummus & Sun-dried Tomato
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika powder
  • 1 tbsp of lemon juice
  • 2 tbsp olive oil
Method :
  1. In a bowl, add the mixed greens, rice, black beans, peppers, corn tomatoes, and cherry tomatoes.
  2. Then add the chopped avocado, parsley and finish by adding the Lummus Sundried tomato dressing!
