The comfort food you didn't know you needed π our take on Mac & Cheese! π§

π΄ Serves 4
π§ Ingredients
1 Butternut Squash (cubes)
2 tbsp olive oil
salt & black pepper
3 tbsp Lummus Original
300ml milk of your choice
400g pasta (cooked)
1 cup cooked pasta water (optional)
π₯£ Method
1. Preheat the oven to 180C.
2. Peel and cube butternut squash, spread on a baking tray, drizzle olive oil, season to taste and roast for about 25-30 minutes. While the squash is roasting, boil water to make the pasta as directed on the box.
3. Once the butternut squash is roasted, add it to a blender with milk and Lummus Original.
4. Blend the sauce until creamy. If it is too thick add a little bit more milk and paste water until it reaches a creamy consistency. Drain the pasta and add the sauce, stir, and enjoy! π
