Potato Salad with Lummus

🥗 Ingredients:
9–10 small white potatoes, cooked
black pepper, salt, and pepper
chives, chopped
1/4 cucumber, diced

🍶 Ingredients for the dressing:
1 package (160g) Lummus Sundried Tomato
water, as needed

🥣 Method:

1. Start by boiling the potatoes in a pan of water.

2. Place the potatoes on a baking tray, spaced apart, and gently crush them with the base of a glass. Season with olive oil, salt, and black pepper to taste. Bake at 180°C for 25–30 minutes, until golden and crispy.

3. In a large bowl, add the entire jar of Lummus and gradually mix in water until you reach a creamy consistency. Add the roasted potatoes, cucumber, and chives, then mix everything together well.

4. Serve and season to taste!
