Stuffed Bread

If you want to impress your guests at your next Christmas dinner, try this recipe! No one will believe that this stuffed bread is healthy, protein-rich and vegetarian!

Ingredients:

  • Large loaf of bread
  • Tofu
  • Smoked paprika to taste
  • Salt to taste
  • Pepper to taste
  • Cumin to taste
  • Olive oil to taste
  • Mustard to taste
  • Vinegar or lemon juice to taste
  • 100ml vegetable drink
  • 30g (or 2 tablespoons) pure Tarwi vegetable protein
  • 100g grated light mozzarella
  • Pitted black olives, sliced


Preparation:

1. Preheat the oven to 200ºC

2. Remove excess moisture from the tofu, grate it using the thickest side of the grater and season with paprika, salt, pepper, cumin and olive oil.

3. Spread the tofu on a baking tray and bake in the oven until crispy.

4. Make the vegan protein mayonnaise: in a tall glass, combine the plant-based drink, mustard, salt, pepper, the vinegar or lemon juice, and Tarwi neutral vegetable protein. Add the olive oil in a thin stream while emulsifying with a hand blender until you obtain a creamy consistency.

5. Prepare the filling: in a bowl, combine the tofu, mayonnaise, olives and grated cheese and mix everything together until it forms a paste.

6. Cut a lid off the bread and remove the crumb.

7. Place the bread on a baking tray lined with baking paper and fill it with the mixture. Finish with a little more grated cheese and bake in the oven together with the pieces of crumb.

8. When the cheese is nicely browned and the crumb is toasted, it's ready to eat!
