If you want to impress your guests at your next Christmas dinner, try this recipe! No one will believe that this stuffed bread is healthy, high in protein, and vegetarian!
Ingredients:
- Large loaf of bread
- Tofu
- Smoked paprika to taste
- Salt to taste
- Pepper to taste
- Cumin to taste
- Olive oil to taste
- Mustard to taste
- Vinegar or lemon juice to taste
- 100ml of plant-based milk
- 30g (or 2 tablespoons) of Essential+ Vegan Protein, Neutral Flavor
- 100g of light mozzarella cheese
- Black olives, pitted and sliced
Preparation:
1. Preheat the oven to 200ºC.
2. Remove the moisture from the tofu and grate it using the larger side of the grater, then season with paprika, salt, pepper, cumin, and olive oil.
3. Spread the tofu on a baking sheet and bake until crispy.
4. Make vegan protein mayonnaise: In a tall glass, combine the plant-based milk, mustard, salt, pepper, and vinegar or lemon juice. Gradually add the olive oil in a thin stream while blending with an immersion blender until you obtain a creamy consistency.
5. Prepare the filling: In a bowl, mix the tofu, mayonnaise, olives, and grated cheese until a paste forms.
6. Cut a lid off the bread and remove the crumb.
7. Place the bread on a baking sheet lined with parchment paper and fill with the mixture. Add more grated cheese on top and bake with the bread crumb pieces.
8. When the cheese is browned and the center is toasted, it's ready to eat!
