Ingredients

For the dough:

  • 3 large eggs + 2 egg yolks
  • 40g vegetable protein Tarwi vanilla flavored
  • 40 g spelt flour
  • 3 teaspoons of baking powder
  • Vanilla essence to taste

For filling and covering:

  • 150 ml soy cream or light cream
  • 3 tablespoons chocolate-flavored lTarwi vegetable protein
  • 50 g dark chocolate (70% coconut)


To decorate:

  • Tarwi flavored vegetable protein (to simulate 'snow')
  • Christmas decorations of your choice

Preparation Method:

1. Prepare the dough: Beat the eggs with the egg yolks and gradually add the vanilla-flavored Tarwi vegetable protein. Add the spelled flour and baking powder, mixing well. Add vanilla essence to taste.

2. Bake the dough: Pour the dough onto a baking tray lined with baking paper and bake in a preheated oven at 160 ºC for 3 to 5 minutes, depending on the oven and the size of the tray. The thinner the layer of dough, the faster it will bake. The dough should be baked, but does not need to be golden brown.

3. Prepare the filling and topping: Place a saucepan over low heat and add the cream, Tarwi cocoa plant protein, and dark chocolate. Stir until you obtain a smooth and homogeneous cream.

4. Assemble the log: Once the dough is baked, remove it and place it on a kitchen towel. Cover with a portion of the chocolate cream. Roll gently. Cut the ends diagonally to form 'branches' and arrange them decoratively. Cover everything with the remaining cream.

5. Decorate: Make the veins of the log with the help of a fork. Sprinkle vanilla vegetable protein to simulate snow and finish with Christmas decorations.
