Okay, this might be our new favorite bowlβ¦ Meet Tarwi's Warm Fall Salad with Marinated Lupins & Basil π SO GOOD!
Full recipe below (PS feel free to swap the butternut squash for pumpkin π if you still have leftover Halloween squash!)
π Time : 45 min
π΄ Serves 2
π₯ Ingredients:
cooked broccoli (about 1 bunch)
1/2 butternut squash (cut into cubes)
4 tbsp olive oil
1/2 tsp paprika
1/2 tsp salt and pepper
1/2 tsp mixed dried herbs (stem, rosemary, oregano, lavender)
Tarwi Marinated Lupins & Basil
1/2 avocado
3 tbsp pomegranate
πΆ Dressing :
3 tbsp olive oil
3 tbsp apple cider vinegar
black pepper, salt, and pepper
π₯£ Method :
1. Preheat the oven to 180ΒΊC.
2. Toss the pumpkin with olive oil, paprika, mixed herbs, salt and pepper. Spread it on a baking tray, and bake for 20 minutes. Remove from the oven, stir well, and bake for a further 7-10 minutes until golden.
3. On a plate place the cooked broccoli, the roasted pumpkin, the Tarwi Marinated Lupins, avocado and pomegranate.
4. Shake the dressing in a jar and drizzle over the salad.
5. Enjoy!
