Mushroom Stroganoff
This mushroom stroganoff is a lighter, more nutritious and flavourful version of the classic dish 🍄✨
Instead of traditional cream, it uses neutral Tarwi vegetable protein, which creates a super creamy, protein-rich and 100% plant-based sauce — without altering the flavour of the recipe.
To further enhance the result, we add Dried Tomato Lummus, which adds depth, intensity and that special touch that makes all the difference 😍
Simple, comforting and nutritious: a perfect recipe for any day of the week! 🌱💛
Ingredients:
- 625 g brown mushrooms (but you can use your favourite mushrooms)
- 1 medium onion, chopped
- 2 cloves of garlic, chopped
- olive oil to taste
- 300 ml vegetable drink of your choice + 100 to 200 ml extra
- 3 tablespoons of More than Protein: Unflavoured/Pure
- 1 teaspoon smoked paprika
- 2 teaspoons dried tomato Lummus or tomato paste
- salt and black pepper to taste
- 1 dessert spoon of soy sauce
Side dishes: rice or spaghetti.
🥣 Preparation:
1. Heat a dash of olive oil in a frying pan and add half the mushrooms. Cook until golden brown, stirring occasionally to prevent sticking. Remove and set aside.
2. In the same frying pan, add another dash of olive oil and sauté the onion and garlic until golden brown.
3. Now for the secret: instead of cream, add 3 tablespoons of neutral protein to the onion mixture. Add the vegetable drink and mix well to remove any lumps. Cook over low heat until the sauce is creamy.
4. Place the sautéed mixture and the sauce in a tall glass. Add three tablespoons of the sautéed mushrooms and blend with a hand blender until you have a smooth, creamy sauce. If necessary, add a little more vegetable drink until you achieve the desired consistency.
5. Pour the creamy sauce back into the frying pan and add the sautéed mushrooms. Mix well.
6. Season with mustard, sun-dried tomato Lummus, smoked paprika, salt, black pepper and a dash of soy sauce for an umami touch. Stir everything well and adjust the texture with more vegetable drink if necessary.
7. Serve with your favourite side dish, such as rice or spaghetti, and enjoy!
